Sheri’s rhubarb bars

This dessert is easy, fun and delicious! It’s a late spring-early summer favorite. 


1 cup flour 
1/2 cup sugar 
1/2 cup butter, room temperature 

2 eggs
1 cup sugar
1/4 cup flour 
1/4 tsp salt
2 cups diced rhubarb 

Preheat oven to 350°. Line the bottom of an 8 x 8 pan with parchment paper going up the sides so it will be easy to remove after cooked.

Preparing the crust: Press into pan going up the sides.  Bake for 15 minutes. Crust will be pale in color. While crust is baking, mix together eggs, sugar, flour and salt. Mix well, then stir in rhubarb. Pour mixture onto the hot crust evenly. Bake all together for 45 minutes. 

Optional 10 minutes before done, sprinkle extra sugar on the top. Continue baking. 

Let the bars cool, remove with the parchment paper, and cut into squares.
