Madge Hollander, a very special 99-year-old, passed away in early August. She shared this recipe with us in July.
Ingredients
½ C chopped celery
½ C chopped green or red pepper
1 C chopped onion
1 clove garlic
1 C chicken broth
1 C peeled, diced potatoes
1 C chopped carrots
2 T olive oil
½ t salt
½ t pepper
1/3 t dill
1 can creamed corn
2 C half and half
Salmon filet
Instructions
Place salmon skin side down on aluminum foil. Bake at 350 for 10 minutes or until done. Cool.
In a large saucepan, sauté celery, onions, pepper, and garlic in 2 T olive oil until tender. Add broth, potatoes, carrots, salt, pepper, and dill. Bring to a boil. Cover and simmer until vegetables are tender. Stir in corn, half and half, and salmon. Simmer for 15 minutes and serve.
