Madge’s zucchini bread

Madge Hollander’s daughter, Lori Barnes, sent us this recipe, a family favorite.


2 C sugar
3 C flour
3 eggs
3 C grated zucchini (raw, don’t peel)
1 C vegetable oil
1 t salt, soda, cinnamon, and baking powder
2 t vanilla
1 ½ C coconut, raisins, or dates
1 ½ C chopped nuts (optional)


Grease and flour 2 loaf pans. Combine all ingredients and put in pans.

Bake at 350 for 1 hour or until lightly brown and tests done.

Then enjoy!
