What’s in Your Pantry?

Living under the quarantine, some people have been finding it easier to clean out the pantry and freezer so they don’t have to go to the grocery store as often. Since more people are cooking at home, The South County News thought it would be helpful to publish some recipes that could use up some oddball findings and make the ingredients into great comfort food.

Robin Maple is noted for turning anything into a special dish. She has catered area events for many years but is staying close to her home on Long Lake these days. She offers these two recipes as a good way to create that special dish your family will love.

Artichoke Salad

Small jar marinated artichokes chopped, tender parts only
1 cup mayonnaise
1 t curry powder
2 T finely chopped red onion
2 T finely chopped red pepper
2 Uncle Ben’s long grain and wild ready rice (microwave bag) prepared

Mix together chopped artichokes, up to 1/4 cup marinade, mayonnaise, onion, red pepper and curry powder. Mix in rice and chill.

I sometimes add diced chicken.

Garbanzo Bean Salad

One can garbanzo beans
1/4 cup red pepper (jarred ok)
1/4 cup red onion
1/4 cup feta cheese
Handful kalamata olives halved
1/2 t Italian spices
1/3 cup Italian dressing
Small squirt sriracha sauce (optional)
Small jar marinated artichoke hearts chopped

Mix everything together and chill.
