Chopped romaine and couscous salad

A delicious, light summer salad.

For salad: use chopped romaine, 1 rinsed can of corn, 1 diced red bell pepper, diced red onion, ½ C chopped pecans, ½ C dried cranberries, and 1 ½-2 C cooked couscous (could also use a gluten-free grain or small noodle).

Dressing: ½ C olive oil, ¼ C apple cider vinegar, 2 T lemon juice, 2 T honey (or more, depending on desired sweetness), ¼ t salt, ½ t basil.

Prepare salad and dressing. Toss before serving.
